When life gives you lemons…squeeze out all that goodness and freeze the juice for later! Our Meyer lemon tree produced A LOT of fruit this year. While I enjoyed admiring looking at the food I GREW IN MY OWN YARD 🍋🤗 in a pretty, simple white bowl on the dining room table, I wanted to make sure we could enjoy these beauties well beyond season.
The girls enjoyed helping me harvest and juice them (although it was very, very difficult for me to stand by and watch them pour the juice into the ice cube mold – #typeapersonality – I managed), and now I have a nice stock of freshly squeezed lemon juice at my fingertips. Whenever a recipe calls for lemon juice, I just take a cube out of the freezer and let it thaw. Easy peasy lemon squeezy! Standard ice cube trays hold 1 oz. of liquid, which is 2 Tablespoons or 1/8 of a cup. So it’s really easy to get exactly the right amount of lemon juice for your recipe!
